An email address can be set for each user.  You can change your own
user settings to specify yours by going to Main Menu > User Settings.
If you need to set it for other users, you'll need to go to Main Menu
> Server Manager > Administer Users and Groups > Users.  Find the user
you need to change and click on it, then click "Edit User Data" in the
Action Menu.

You'll also need to make sure the mail server settings are correct for
the server (also under Server Manager, go to Administer RedDot Content
Servers > RedDot Content Servers, click on your server then click on
"Edit Settings" in the Action Menu).
