That is weird. Removing the monitor should not cause your system to crash.
As Ian stated, it might be hardware related. In fact, I configure all my
headless boxes at runlevel 5, but I disable display :0 so that X will not
start at the console (but still answers XDMCP requests from the network).

Have you tried setting your BIOS to NOT issue the above error if the
keyboard is missing? FWIW: I have 3 headless linux boxes that issued the
same error until I found the proper setting in the motherboards BIOS.
