We use shorewall on our production setup too. It works well and is easy to maintain.
If you are trying to learn how iptables and Nat work you might look into GuardDog. It is designed to make it easy to setup a nating firewall and generates rule set text files that you can look at. The tutorials say that it was designed as a learning tool. So, you can enter changes and see what happens.
