I seem to remember (as another poster noted) that the XP Office apps
license prohibits running on non-native platforms.

No great loss IMHO. Evo works pretty well for basic mail/PIM needs. I used
it daily for about a year in a job where the Exchange server was setup to
allow IMAP for mail and LDAP for address lookups. Their SMTP relay was
broken, so I used a local sendmail that was setup to listen only on
localhost (the default).

If IMAP and LDAP are not enabled on your Exchange server, then you could
use Outlook Web Access (OWA) or get the Ximian Connector. I used OWA at
another job for about a year, and it was okay because email was not
critical for me at the time. The only real pain was having to use Outlook
and Outlook Express on a winbox every few months to download updated GAL
data to import into my local LDAP server.

I wholeheartedly agree. If there are winapps that you cannot do without,
then I recommend you run Windows. Running important apps in a non-native
environment is seldom worth the trouble.
