because if I use tar to backup the /abc filesystem I will backup the /abc/xyz filesystem too. but I don't want it.

for something that straightforward, why not just use a combination
of tar and gzip or bunzip2?

you can also combine that with timestamps to do just incremental backups
during the week, and a full backup on the weekend.
