If you host your own authoritative DNS tables, this is really easy.
Just add a record in your main hosts file that looks something like
this:
IN MX ## your.mailhost.com.
...where the ## is replaced with the MX server priority number, and
where your.mailhost.com. matches the existing A record of your mail
server.
If somebody else runs your DNS tables, they probably have some sort of
process in place for submitting changes, so it will depend on them.

Well, yeah, but that isn't a big deal with only five real hosts. The
Linux Network Administrator's Guide has an intro to this, or get the
O'Reilly "DNS and Bind" book for All You Ever Wanted To Know.
