You only need one gateway to the internet period. And you set which card is
using that gateway, via eth0 or eth1. Your system will know what to do from
there to get out.
I have one system running 2 cards as well and that is how I am setup.
Windows connects to eth1 and routes out to eth0 to my cable modem then out
to the internet. Eth0 is set as the gateway out. Eth1 I didn't set
anything except IP/subnet.
Not sure if that is a good explanation but hope it helps.
