You may be able to work something out with a custom printcap entry, but it
will probably invlove using a postscript printer driver on the Windows
machine. The Apple Laserwriter (Laserscript?) driver works well for this.
You could set it up for print-to-file and put the file in a shared directory
on the Linux box. A cron job could then call the ps2pdf utility to create
the PDF file.
