I'd advocate postfix based on limited personal experience. I chose it on 
strong recommendation from a respected name on this list, and it was much 
easier than sendmail - again, because it has docs. I'll admit I had to come 
back for a little help, but that's because I'm a certified dufus, not 
because the package was lacking in any way.
