If the printer has it's own IP address and is a postscript printer, you can print directly to it via TCP/IP Printing (LPR) printing using the printer utilities that came with your Mac (last I checked OS9 has them).
If the printer does not have it's own IP or is PS, but is connected to the Linux server, on the Mac, you can connect via desktop printer utility: in the host put the IP of the server, and in the queue enter the LPR queue name of the printer, and it should work. If you also want to share files, then use netatalk, Daniel already posted the links. I use netatalk, and I have not been able to get to behave as a full featured AppleShare server. I can connect to the linux box using tcp/ip (via the chooser), that is I have to know the IP address of the box I'm looking for. It does not appear in the appletalk list in the chooser.
