You can always boot into rescue mode with your redhat CDs. You then will
have to manually mount your / partition, since your fstab entry is
incorrect, but that way it will be mounted rw and you can edit your
/etc/fstab. You could of course also write a label to this particular
partition to render your fstab entry correct :)
