qmail is probably the most secure, followed closely by postfix. Sendmail 
is still very popular, though, because it offers more features than any 
other MTA. Like anything else, though, there's a tradeoff between features 
and security.

If you need the features of sendmail or postfix, use it and do your due 
diligence in keeping it patched and locked down. If you don't need all the 
bells and whistles, or are looking for pure speed, go with qmail.

There really is no "best" MTA; there are just different choices to fit 
different environments. Your mileage will vary.
