Pistol shrimps can and usually are the ones that do. Mantis can as well, but
it is usually very loud and they generally do it by snapping their "weapon"
claw against the side of the tank. One thing to remember about mantis, if
they are big enough to bring down a fish or any other large prey, chances
are you will see them. By the time they are old enough for fish, they are
not as shy and also find a home under rock or substrate, and you can usually
find them quite easily. Granted, they are powerful predators, but by the
time they can hunt down and kill fish, they are usually a few inches long.
Are you absolutely sure that the worm is dead and has not just shed its
crown?? If so, I would not blame it on another animal until you see it
happening or there is obvious evidence that an animal did it, and if
anything, I would look at the crabs that you have seen eating inverts in the
tank. Sounds like you need to get a trap and start trapping these guys.

The popping or clicking sound can be caused by a mantis. Not sure if
pistol
shrimp create that sound.
