If he sleeps in the open at night, wait until an hour after lights out. Shine a light at him. This will stun the fish, making it easy to get him out of the tank with a net. If he sleeps in the rockwork where you can't get to him (and he probably does :( ) then this won't work. Thought I'd suggest it anyway, as it's an easy and safe way to capture a fast, sly fish.
