Printing to PDF works quite well and Preview has some pretty powerful  
PDF editing features.

If you don't need Acrobat's form creating features and such, you're set.

Creating and processing PDF files
You can create and immediately process a PDF file by choosing an item  
from the PDF pop-up menu in the Print dialog. That pop-up menu has  
items to perform many common tasks, such as creating and sending a PDF  
file it in an email message.

You can add your own items to the PDF pop-up menu. If you create a  
Print workflow plug-in in Automator, that plug-in is added  
automatically. For more information open Automator and choose Help >  
Automator Help, and search for “Print workflow plug-in.”

You can also add other items, such as applications and AppleScript  
scripts, that can open a PDF file. For example, you can add an  
AppleScript script that applies a Quartz filter to a PDF file, or you  
can add an application that opens the PDF file immediately after it’s  
created.


To add an item to the PDF pop-up menu:
   1. Choose File > Print.

   2. Choose Edit Menu from the PDF pop-up menu.

   3. Click the Add (+) button and select the item.

For example, if you want to open the PDF file in Adobe Acrobat, select  
Adobe Acrobat. If you’ve created an AppleScript script that applies a  
Quartz filter to the document, choose that script.

An alias to the item is saved in the PDF Services folder in your  
Library folder.
