Quicksilver's at the top of my list. It's one of those apps that makes me wonder how I ever got along without it. (http://www.blacktree.com/) It's a keyboarding app - you type a simple key combo to bring up the interface, then you start typing the name, or part of the name, of what you are looking for. Then you can decide what to do with it - open it, play the song, reveal it's location in the Finder, copy it, show contents, etc. It's brilliant.
VMWare Fusion is crucial, being that I'm a web developer/designer & I have to have the Windows OS somewhere for IE testing. (http://www.vmware.com/products/fusion/) CSSEdit is a unitasker, but it's a great one. I could use TextWrangler for editing css files, or Coda, but CSSEdit's elegance and grouping is worth the cost.
