FAQs/HowTOs for RH4 will be by and large the same for RH5 (In regards to above services). I imagine there will be some dovecot differences (since RH5 makes the break for dovecot 1.0), however I'd imagine it wouldn't differ hugely.

As for best choice of IMAP server, it depends.
There is plenty arguments and reasons to choose one piece of software over another, the main IMAP servers would be courier-imap, dovecot, and cyrus-imap (in no particular order).

From what I gather, for a large organisation, courier or cyrus tend to hold up better than dovecot.
Courier wouldn't be as nice to setup as cyrus or dovecot.

If you've a couple of hundred users, I would imagine dovecot covering your needs, if your into the thousands of users, then it may be worth investigating cyrus/courier.
