How much memory are you committing to the VMs? Sounds like you might be running out. Try lowering each VMs allocated memory and see if that helps. Also, you should definitely be up on 1.0.3 like Hugh said. You should also note that VMWare Server is not supported yet on RHEL5 as a host or guest so if it breaks, you get to keep both pieces :-)
