NAS is the most simple, and frankly, most san errors I've seen are user-error. NAS will probably also perform better than ISCSI.

I've also used (1Gb) fibre-channel- you can get 1Gb fibre-channel for almost free used, if your budget is really small. (used drives are,of course, shaky- but used fibre switches/cards/cables are usually ok. Go for HSSDC, not fiber-optic, fiber-optic is much more sensitive to dust (an issue with old equipment) and is much easier to pull out by accident.)

(btw, I'm switching most of my servers from 1Gb fibre-channel to local-storage as we speak; the advantages of central storage, for me, are not greater than the simplicity and reduced rackspace of local storage)
