A couple of "non-easy" methods would be:

1: browse redhat's srpm repository
ftp://ftp.redhat.com/pub/redhat/linux/enterprise/5Server/en/os/SRPMS/

2: Browse centos' package list
http://mirror.centos.org/centos-5/5/os/i386/CentOS/
http://mirror.centos.org/centos-5/5/os/x86_64/CentOS/

and searching google came up with the same responses so *shrug*

BUT, I can tell you upfront that all 5 of those packages are standard parts
of RHEL, but it is very rarely but occasionally possible that the RHEL
package might be missing something you need and you'll have to re-package
it (which isn't that hard but its not default).  And btw, the apache
package is called httpd.

Pretty much as you assumed, but you can get config help in some cases
depending on the scenario.

Kinda.  I got Global Services to quote me on install and support of the
install of a medium sized ISP mail system once and those were the
components they offered.  Wasn't worth the price at the time.  You can
always ask :)

The kick with RHEL5 is that you have to take into consideration that this
is a long term supported version of FC6.  Because of that long term support
they typically run an older version, but will commonly backport fixes from
upstreams newer version for bugs and security errata.  Here are the current
versions based on RHEL5.3:

Postfix 2.3.3
Dovecot 1.0.7
Squirrelmail 1.4.8
Apache 2.2.3
PHP 5.1.6
