Virtualization, along with provisioning, "Add-on" entitlements, etc...
are different than "Software Channel" entitlements/subscriptions.
Software channel entitlements/subscriptions are selected under the
"child channels" tab of the activation key.  Only those channels that
are children of the "Base Channel" will be listed.

I.e., you select your "Base Software Channel" and "Add-on Entitlements"
under the "Details" tab of the Activation Key.  Then you select your
"Child Software Channels" under the "Child Channels" of the Activation
Key.  The "Child Channels" will correspond to the "Base Channel."

BTW, your server/organization, of course, must have the required Extras
(EL3-4) / Supplementary (EL5) Software Channel entitlements assigned.

I.e., "in the cert" in the case of the RHN Satellite / Org 1.
"Assigned" (from Org 1 / Sat Admin) in the case of Org 2+.  A lot of
people forget to assign entitlements into Org 2+ before creating
activation keys, hence why software channels (including children, even
when the base is assigned) don't showup.
