If hyperthreading is working you should see 16 logical cpu's listed in 
/proc/cpuinfo (instead of the 8 physical cores).

You didn't supply the cpu model (can be seen from /proc/cpuinfo). I 
believe you're using Intel 7400 series cpu's which do not have HT.
