Part of the gtkpod project is "libgpod" which is a library for accessing iPods. Rhythmbox already uses this library to access iPods, and it could be used to add full support (write/sync et al). Work is underway on this, and a few small pieces have just been committed to cvs, post 0.9.4. Bug 338564[0] is a tracker bug for iPod support, and has the bugs for various pieces in it's dependencies. Feel free to subscribe to various bugs if you want to find out when work is done.
