I have added the ARTISTSORT tag on my FLAC files using: http://www.mp3tag.de/en/
The ARTIST tag will be what is displayed by the SB and the ARTISTSORT will be used to order the files if it exits so: ARTIST = Rod Stewart ARTISTSORT = Stewart, Rod Will show Rod Stewart on the display but will be sorted under 'S'. As you have said if you want the display to be in the form of 'Stewart, Rod' you can just use the ARTIST tag and it will still sort unser 'S'. The tagger mentioned above will allow you to sort your entire libray by ARTIST so you can then apply the ARTISTSORT tag to all tracks by each artist in one go.
