Just to update this thread, I have decided to go with FLAC for the
following reasons:

1.  Lossless and is decoded natively on the Squeezebox
2.  Control - it's open source.  Screw closed formats!
3.  As far as iTunes/iPod is concerned, I'd never get my entire library
on my iPod so I will now resort to playlist syncs and select album
works.  Since I have an iPod Photo 60 GB, I will also reserve just 60
GB's of space on my hard drive for whatever files I deem iPod-worthy at
the time and transcode those FLAC files to a high-bitrate AAC, MP3, or
other lossy format.  For critical works I might even transcode those
select FLAC's to Apple Lossless on my iPod.

I've got EAC ripping/transcoding as I type this; CPU utilization is 3%
to 5% during RIP and averages 40% to 70% during transcoding to FLAC on
my Athlon X2 4400+.  I've set it up to transcode to FLAC during the RIP
- seems to be running quite well.

I plan to add a 2nd CD-ROM I have sitting around to begin
ripping/trancoding two CD's at a time since my X2 seems to have room to
spare.  Gotta' love dual cores!
