I agree with Radish. ALAC is your best bet if you want to stick with iTunes. You can burn ALAC files with other programs but I'd be shocked if you couldn't burn ALAC using iTunes (i don't use it myself so I don't know). Provided the file isn't DRM protected of course... which it shouldn't be if you ripped it from your own CD. The beauty of lossless is that you can easily convert it later to any other format you want (for example with dbPowerAmp http://www.dbpoweramp.com/codec-central.htm which supports ALAC, MP3, FLAC and pretty much all other codecs).
