Hi JD, Its definitely possible to save Replay-Gain in Id3v2 tags. Foobar can do it.
The options for this have changed in recent builds of Foobar (and in fact I can not longer find the option of which type of tag is written). I just tried it on an MP3 on my machine and by default 0.9.1 seems to write to Id3v2 (not APE). The next question is, does Slimserver support Id3v2 replay-gain? I'm pretty sure based on this old thread that it does: http://forums.slimdevices.com/archive/index.php/t-16409.html. So you should be good to go. I'd test it on a couple of tracks before doing your whole collection.
