When I create Ogg Vorbis files from the stereo soundtrack on a DVD, I
usually have a 2-channel AC3 file which I convert to WAV with 'BeSweet'
(http://dspguru.doom9.net/) (fronted by BeSweet GUI to take the pain out
of all the options).  I believe that BeSweet supports LPCM too.  That's
for Windows; I'm afraid I don't know about Mac software.

In my experience I've not had problems with gaps from DVDs.  It could
be down to the ripping software or the original conversion, I guess. 
For DVD soundtracks I use SmartRipper (again on Windows) which has
served me fine.

And of course, if your DAC supports Dolby Digital you can always
extract the 5.1 soundtrack as well:
