Once I get back to my regular PC I can walk you through this, but it's in Tools - Options. You can specify what tag types get written when you hit the save button and what gets deleted when you press the "X" button. However you have to write the new tag type BEFORE you delete the old tag types or you will delete your tags! Essentially you want to WRITE ID3v2.3 tags and DELETE ID3v1 tags.
