I believe with -V what you'd be left with just the original WAV file,
as EAC should see the error and then not delete the original rip.  You
could then run the WAV through Flac Frontend or else rerip.

I used to use -V when encoding, but it never threw an error and all it
ever did was slow down the ripping/encoding process.  I think what
you'll find is that if a file gets corrupted during the encoding phase,
it's almost always a problem with the disk storage system of the PC. 
Make sure your disks are OK and there's not much risk of having badly
encoded files.
