Foobar lets you preserve the directory structure quite easily, just
setup the output filename with the appropriate structure. I use this:

%directoryname%\%tracknumber%. %artist% - %title%

Which puts the tracks in the same named directory as they were in the
original, but in a different base directory - so I end up with 2
parallel trees. If you use multiple levels of directories (e.g.
artist/album/track) then you just need to use the right variables. This
