I think things are resolved, but its a bit of a mystery as to why.

Here's a shortened summary of what i did:

-- as a test, i copied one of the files for which slimserver was
reporting a huge volume adjustment value and gave it a new name.
-- i scanned the new copy into slimserver and was shocked to see that
it didn't have any volume adjustment value!
-- I forced a rescan of my entire library using "clear library and
rescan everything" and that seems to have made a difference.  Don't
know why, but I'm glad.

I still used MP3Tag to remove all the iTunNorm tags from my files just
in case.

I wish a future version of SlimServer let you pick which volume
adjustment values to use.  It might be good to have iTunNorm values in
the files for loading them onto an iPod, but use (better) APEv2 values
from MP3Gain and other tools.

thanks to everyone for all your help.  If things change I will let you
know. I'm about to upgrade to iTunes 7.1 and we'll see what fun that
holds!
