Well, try out SS/Softsqueeze before you take the plunge. You might try
the Custom Scan and Custom Browse plugins for SS as well.

The Quod Libet player for Linux appears to provide flexible support for
more tags than just the standard ones.  I think it includes a tag editor
too.

The Flac tag format is very flexible too. Tag names are straightforward
(Composer is Composer.)  You can define your own tags too.  I'm
currently using Composer, Conductor, Work Name, Version, Sub Genre,
Collection Name and some others in addition to Composer, Album and
Artist.

I think you described the problem with the whole ripping, tagging,
organizing and playing music files.  Most music ripper, tagger and
player s/w is stuck on the lowest common denominator.  Most developers
are deciding that the needs of classical music listeners don't matter. 
Even MP3 with ID3v2 supports the Composer tag.  We need a change of
attitude by developers.
