Your format also doesn't seem to include track number (although easily accommodated as Artist\Album\tracknum-trackname.wav). Nevertheless, tagging allows richer information. In addition to the already mentioned year and genre, you can, for example, add sorting tags (e.g. artist=David Bowie, artistsort=Bowie, David), compilation flags (which SS uses heavily) and comments. Also, the directory structure approach can be challenging for compilation albums. Ultimately, having metainformation stored with the track is more robust than guessing from the directory structure. While SS can guess the info, if you start using any other apps (e.g. MusicIP) they may not be able to.
