I do what you originally suggested - artist = composer, album = piece and detailed performers, track = movement. I then get the display to show all of this info (in that order).
This works for me as I usually listen to whole pieces, so can just play the whole 'album'. I'm also happy with what it shows for pop - I want to see "Hendrix, Jimi -- Electric Ladyland -- Voodoo Chile" on my SB3 display; but others may differ. I also put stacks of info into the Genre tag, using multiple tags. I'm about to extend my genres to include a tag like "Instrument - piano", as I sometimes want to browse this way. However, I think I am a tad obsessive in this respect.
