Not really. There are no additional tagging fields available from within EAC. You could modify the 'Additional command line options' in the compression settings, but you'd have to do this each time you ripped an album and couldn't set things for individual tracks. It's really only useful for things like comments that you want added to every single ripped track. Find a good tag editor and get used to editing the tags on every album after you rip. With something like Mp3tag you can create 'Action Groups' that let you automate a lot of things.
