There are two solutions:

SOLUTION 1:
If your tagging software supports it, you can add several GENRE tags to
the same song, for example:
GENRE=Denmark
GENRE=Rock
GENRE=Concert

SOLUTION 2:
Enter several tag values in a single genre field, for example:
GENRE=Denmark;Rock;Concert

To make this solution work with SlimServer you will have to goto
"Server Settings/Behaviour" in the web interface and enter the
separation character you used in the "MULTIPLE ITEMS IN TAGS" field.

At last you will have to perform a rescan in SlimServer for the changes
to be detected.

In the standard SlimServer browse menus the genres will be displayed in
a flat structure, where the song you tagged is available under all the
genres you tagged it with. If you like to be able to browse the genres
in a tree hierarchy you currently need the Custom Browse plugin, with
it you can create a "Genres/Sub Genres" menu.
