Yes, higher quality does mean more disk space. You'll probably end up spending quite a lot of time getting your music library neat & tidy (including sorting out tags and adding album art), and in addition to findings space to store it, you should also think about somewhere to back it up.
It would be bad to devote all the time and effort only to then lose all your hard work if you hard-drive fails! On the specific question about album art, EAC does not add that.
