That's rather disingenuous.

I think it's more to do with a desire for peace of mind - knowing that 
things are perfect.

I only plan to convert my CDs once, and the ripping process is the least 
painful part of the process - it's much more hassle sorting the tags 
out, esp. for classical music.

So, I'm quite happy letting EAC chug away while I do something else. 
It's not costing me any time, whereas the tagging is hands-on, 
interactive and does cost me time.
