Is there any reason why you're using iTunes?

Ultimately, what type of files are you storing on your hard drive?  Or
what type would you _like_ to end up with?

WAV files have no tagging mechanism, so the data that you see (or
enter) in EAC gets lost except where it's made a part of your file
names.

Most people around here use Flac format for lossless audio, occasional
ALAC (Apple lossless) or Ape (Monkey's Audio).  Flac and Ape will be
tagged correctly by EAC if you set it up correctly to both rip _and_
encode to your chosen CODEC.  But neither can be used by iTunes.  For
lossy compression, Mp3 or Ogg or AAC are most common.  Not sure about
AAC, but Mp3 and Ogg can also be tagged through the EAC ripping and
encoding process.
