You can have multiple values in a single GENRE tag, separated by some
character such as a semi-colon.  In the SqueezeCenter Settings go to
the 'Music Library' tab and find 'Separator for Multiple Items in
Tags'.  Enter there the character that you want to use.  (Read the 'i'
information: As soon as you make a change to this option SqueezeCenter
will start rescanning your library, so don't do it until you've tagged
your files accordingly.)

For Flac, Ogg or Ape files you can do it by usin multiple GENRE tags. 
This is the recommended way for those formats, but either method will
work.  To accomplish this, you'll need a tag editor that can do this,
such as Mp3tag.  For Mp3 files and other formats, only using a
separator will work.
