for ripping, I'm throwing my hat in the ring for dBpoweramp. The reference version is stunningly good, the tagging and file management is perfect - it can call on up to 6 meta sources and mix and match to get the best tagging info. Any format you can think of (I rip to Apple lossless and mp3 at the same time), embeds cover-art for you if you want, or saves it to your folder. Endless options if you wnt them. 100% bit perfect secure rips. Adds replaygain automatically whilst ripping if you want.
Costs money, but well worth paying IMHO. It's sped up my ripping process a jaw-dropping amount. for tagging, mp3tag is superb.
