I use XLD, the above linked thread looks like it'll help you get it
setup.  But for a more complete workflow I'll list what I do:
XLD 
-> CDDB 
-> Drop Down for Music Brainz version of tags
-> While ripping right click save cover art image as folder.jpg in
ripped folder
if image doesn't exist get it from favorite source
-> Open folder with music brainz picard (touch up tags if necessary)
-> Save to server location
-> Slimserver scan for new music
Once a week I clear all and rescan everything

I use xld's rip to multiple format for my wife's ipod, and have to do
the tagging and cover art thing twice but that's my fault for not
figuring out flac2mp3 after the switch over to mac.

This doesn't address a few things that people may want
1.  Replay Gain
2.  Musicip (which I can't get working in OS X for the life of me,
logitech should buy them out and package with slimeserver in my
opinion)
3.  Tagging from txt file (good for live shows from live archive)  I
can't figure out any free program that will let me do this in OS X, if
someone has one please let me know.
