Have you already looked at the Beginner's Guide to Tagging (http://wiki.slimdevices.com/index.php/BeginnersGuideToTagging), and especially the SqueezeCenter-specific guide to mp3tag (http://wiki.slimdevices.com/index.php/Mp3tagGuide)? That's the best place to start. Also, don't forget to do a full "Clear and rescan" after you change the tags to make sure that SC picks up the changes. While you are figuring things out it helps if you work on only a subset of your library.
