Embedding is also useful when using the file on other players. For example if you copy some songs to your mp3 player or your mobile phone. This means when taking single tracks the album art comes with the file and doesn't get left behind.
I use google image search. You can even specify the size you are looking for and would tend to find something. I then load the full size image, copy and paste into the album art box on mp3tag.
