abcde is very flexible if you're comfortable with the shell. The default Ubuntu tool is Sound Juicer, which is called something more generic in the menus, can't remember the exact name. It's OK, but not very configurable.
If you want something that will give you more confidence in your rips, there's Ruby Ripper, but it's sloooow. I don't know of any native Linux rippers that uses AccurateRip.
