I'm not sure about how you can get Mp3tag to pull certain fields from MusicBrainz (I don't use its Tag Sources capability). You can edit any field you like within Mp3tag from the Extended Tags dialog, or by adding a new field to the Tag Panel on the left, or by adding a column to the grid view on the right.
Multi-disc sets must have exactly the same album name if you want Squeezebox Server to group the discs into a single album, so if that's happening it's a _good_ thing. Squeezebox Server recognizes DISCNUMBER (or DISC) and uses it to correctly order the tracks within the album. I'm pretty certain that it doesn't recognize DISCTITLE. If Mp3tag isn't adding DISCNUMBER when using MusicBrainz you can always add it yourself.
