I try to do the same thing as well and only started using the sort tags when I started having problems in SBS perhaps due to the over-rides you are talking about. Once I solved my problem, I kind of forgot what the exact problem was (or found a solution without knowing the problem).
Regardless, I gravitated to Custom Browse out of my preference in using Album Artist exclusively for browsing dating back to previous devices, software, and my tendency to listen to albums. I probably could have gone through and solved my problem without resorting to sort tags. I think it was sometime later that I found that a big part of my problem involved multiple tag formats in files and having them not be obvious (i.e. Ape tags in Mp3's, etc). Now that I've cleaned that issue up (very easy once found), I've never thought to go back and remove the sort tags.
