Pretty simple, actually - if used, they indicate the sort key for "artist" or "album artist" for the file. So if you think Elton John should be sorted under "John" instead of "Elton", just use artistsort=John, Elton on the Elton John tracks. Likewise "albumartistsort" is for overriding "albumartist".
