Actually it is less about how the tags are interpreted by LMS and more about how they are interpreted (or mapped) by your tagging program. There is simply no such thing as ALBUMARTIST in the ID3v2 tags that MP3 files use -- it has to be mapped/crammed into TPE1 or TPE2. If you have an MP3 file and tell iTunes a value for ALBUMARTIST it will map it to TPE2 (originally intended as "Band"), whereas I think mp3tag will map it to TPE1. Thus "iTunes simply works" for you because you've chosen to do it iTunes' way.
Moreover, you can tell LMS how it should interpret the TPE2 tag on MP3 files, ie, whether it should be treated as "Band" or "Album Artist". It's in the LMS settings page. If you're using the Touch's built-in server (which is maybe what you mean when you say you're not using any server?) this option is not available to you. If MP3 is only 1% of your library then it may be worth wasting the space and converting them to ALAC so you only have to deal with one tagging system.
